Happy 2017! I know I’m a couple of days late, but I wanted to take some time to reflect on 2016 and set intentions for 2017.
I don’t really do resolutions, but if I had to choose one word that describes what I would like the upcoming year to look like, it would be mindful. I recently attended a mindfulness workshop through my work, and it was such a good experience. Mindfulness can help increase mental and physical well-being, improve relationships, reduce stress and anxiety, and enhance focus. All of these things sound great for 2017! It’s so easy to get caught up in a never-ending to-do list or distracted by technology and social media instead of being fully engaged with the present. This year, instead of worrying about the past or the future, I want to make more of an effort to savor moments while they’re happening.
Of course, one of my favorite ways to savor a moment is to savor a wonderful meal! Which brings me to a very important question: What would you like to see on “Eating with Emmy Lou” in 2017? I would love to hear from you and do my best to make your wishes come true!

Emmy Lou is so thrilled that her frozen treats are second on the list of the most popular recipes!! She knows taste testing is a tough job, but someone has to do it!
Finally, the most popular recipe this year was for these awesome chocolate and peanut butter mousse parfaits! These are sooo decadent. You would have no idea these are vegan and they have avocado in them!
I also thought I would ask Emmy and Trey what their favorite recipes of the year were. (I tried to figure out what mine was, but I couldn’t choose!!) Here’s what they picked!
