Hi! How’s your week going? Can burgers make it better?
I have options for you! For the meat lovers, I made you a succulent beef burger. For the veggie lovers, we have a tender and juicy portobello mushroom burger. Whichever you’re in the mood for, you’re in luck, because they both have SO MUCH FLAVOR!!
Both versions of these burgers are seasoned with Worcestershire sauce, cumin, smoked paprika, and coriander for a South American flair. Then we throw on some creamy avocado and tangy feta cheese. THEN we top everything with delicious chimichurri sauce!
Chimichurri is kiiind of like pesto. It’s a spicy and garlicky Argentinean condiment that adds brightness to any dish. To make my favorite version of this sauce, chop up some fresh parsley and fresh cilantro and mix it with lemon juice, garlic, dried oregano, red pepper flakes, salt, pepper, and olive oil. You could also through everything in a food processor, but I don’t like dirtying more dishes than necessary and I actually really like chopping up ingredients! (Weird?) Refrigerate for at least an hour to let the magical flavors meld together.
In addition to topping the burgers with the chimichurri, I also brushed the cut sides of the burger buns with some chimichurri and grilled them until golden brown. This made them taste like chimichurri garlic bread buns! YUM.

I tested these burgers with Trey and my dad, who are two of my favorite carnivores. My dad actually really liked them, even though he always wonders why I have to mess with normal food! Trey loved them too and said this is one of his favorite meals that we’ve had in awhile!
These come together so quickly, which makes them perfect for a weeknight meal. You can prep the chimichurri sauce and marinate the portobello burgers or form the beef patties the night before, and then it only takes a few minutes to cook the burgers the night you want to eat them.
This recipe is written for either 4 beef burgers OR 4 portobello mushroom burgers, but feel free to do 2 beef burgers and 2 portobello burgers if you want! You do you, just please, do yourself a favor and make these burgers!
